Slow Cooker Vegetarian Stew
Ingredients:
1 small butternut, peeled & cubed
8 baby gem squash, quartered
1 red pepper, seeded & cubed
1 yellow pepper, seeded & cubed1 onion, sliced
6 sundried tomato halves in oil, chopped
2 tins lentils, drained
5ml Dried Oregano
5ml Dried Sweet Basil
Salt & Pepper to taste
200ml Vegetable stock
Method
1. Add all ingredients into slow cooker.
2. Set onto high for 4 hours.
3. Serve with brown basmati rice, or pearled barley.
